So the purpose of all rules and regulations is to attract the mercy of the Lord and thereby become attracted to him. So we attract the mercy of the Lord to us and by that we become attracted to him.

Sarvabhattacharya in this case although he violates the letter of scriptural, the letter and scriptural both can be honored that is good but if the letter of scriptural is meant for the spirit of scriptural, fulfilling the spirit of scriptural and if that spirit is neglected then acting according to the letter is not good enough.
So sometimes we need to go beyond letter of scriptural to the spirit of the scriptural and Sarvabhauma shows that sharpness of the mind shows that deep assimilation of devotional principles, a deep acceptance of the ultimate devotional purpose of scriptural rules and thus he puts aside both, so this mercy is so extraordinarily special and it is so readily available for him. So recognizing this is a great opportunity he puts aside both the rules of normal cleanliness of brushing the teeth before taking food and the rules of transcendental of religious hygiene of religious conduct of taking bath and doing sandhya before eating and his rejection of these rules demonstrates the exaltedness of his devotion, the intensity of his faith and that is what Lord Caitanya Mahaprabhu celebrates.
